Is there a way to create and access multiple desktops? Mine is getting full
and I'd like to categorize items if possible.

You dont need to put an icon for every program on the desktop.........
you could create specific folders on your desktop and drop icons into it.
as an example you could create a video folder and drop every video related
icon into it.....this should reduce your icon clutter.
