To install SP3 I have to disable the antivirus and antispyware programs I
have. How do I disable them without actually uninstalling them? Or should I
delete them and after the SP3 installation restore them from my recycle bin
again?
Should this also include Windows Defender?

Consult the documentation for each application to find out how to disable
them.
As far as Defender, it wouldn't hurt.

Usually if you rt click the task bar icon there is an option to diable it

OR you could try the installation in safe mode, provided you downloaded
a version that doesn't start off a stub and download the rest over the
Internet while it's running. I don't know if such a version of SP3 is
available direct from Microsoft, as I obtained one of the SP2 CDs
through the mail.

Personally I would NEVER attempt to install an OS service pack in safe mode.
