When I try to use the tab for letters and labels when printing an envelope,
the type comes out green even though black is the default color. It does not
happen with labels.

For some reason, some inkjet printers formulate the ink for Envelopes by
using the three colours rather than black ink.

Try changing the format of the font in the Envelope Address Style.
