When saving a document in the new Word 2007, the option is there to "add a
tag". What does this mean?

Pepamom,
It allows you to search for particular documents with the same tag. In the
open dialogue, click next to the magnifying glass in the upper right corner
and type in the text of the tag. You will get all the documents that have
the same tag in the listing. At least that's how I interpret it.

"Tags" are the hype du jour for what we used to call "keywords". :-)
