It seems to me that there is a way to get Word to underline everything
but spaces, but I can't find it in the help.

Is there a way to do that?

Format | Font--there's an Underline style option that is Words Only. Is
that what you want?

You can also select the word(s) and press Ctrl+Shift+W

The built-in keyboard shortcut for this is Ctrl+Shift+W (doesn't work for me
because that's the shortcut I use to start Word).

You could free up Ctrl+Shift+W by getting the Winkey utility and
starting Word with, for example, Windows key + W.
