I want to be able to select some text, which goes onto the next page, and
then print it (by Print Selection) including the header that occurs between
the selected text?

You can't do that. The nearest you will get to it is to print the two pages
on which the selection appears.

This is not a perfect solution, but you could temporarily put hard page
breaks (Ctrl+Enter) at the beginning and end of the text you want to
print, and then print that page.
