The subject above summarises my problem. For some reason, when trying to
insert an equation into a word document, if I use brackets, and follow it by
a fraction, the brackets disappear. Something similar is happening when I
attempt to use a subtraction sign; it just fails to register within the
document.

Am using Word 2003

Any ideas?

Are you using Equation Editor to do this?
