Is there anyway to retrieve a file that was replaced by an older (date) one?
Is there perhaps a temp folder that might have it cached? It was a excel file
that user did copy/paste and "replace all". This was not done within the
last few minutes/hours so I can not use undo in excel.

You will need to get it from the backup.
