I'm installing a used 2003 server for a totally new domain, and I'd
prefer not to have to do a full reinstall of 2003.
Obviously I don't care about losing any AD or Exchange settings, so is
there a simple way I can do this? Do I just uninstall & reinstall AD?

Uninstalling of AD service will work

Run DCPromo and demote the server to a Stand-Alone server. This will
uninstall all AD instances and clean up the server ready for your
applications.

Then add the server to your new network.
