Previously our company had Novell DHCP services, and this provided us
a live monitor of all DHCP Requests, Acknowledgements, Denies, etc.

The Windows DHCP server seems to be lacking any kind of monitoring. It
does have logs that I can check, but a monitoring tool would be
preferred.

I'm also looking for some way to search for a specific MAC Address
within the system.

Is there some suite of tools available for enhancing my Windows DHCP
Administration beyond the minimalistic management snapin?

I'm not sure if this is what you are looking for, but in the Performance
Monitor (on the DHCP Server) you can select DHCP Server as a
performance object, this allows (amongst other things) realtime
graphicsal display of the DHCP data.

In addition you can of course use counter logs and alerting.
