When I right click on my start button to view my Windows
Explorer, the open folder is always my 'Windows' folder,
which I never use. How do I get that default to be 'My
Documents'. I've read some help items and I see how to
change it from going to start, programs, accessories,
properties, but it doesn't work this way!

You don't change that one. That is an Explore from the Start Menu.
It is not a shortcut you can change.
