When I click on the 'All Programs' arrow at the bottom of the Start Menu, I
don't get a full list of programs any more, most of the shortcuts have
disappeared (things like Windows Update, DVD Maker, and several others have
all gone). Programs I install myself that create folders on the Start menu
are all still there.

How can I get these back?

have you tried opening the start menu, and right clicking it to get to the
properties of it, and try changing settings in there?

Yes, tried that. The recently opened programs list is still there, but the
All Programs list is gone (apart from the folders mentioned).
