I occasionally want random selection to play whole CD's rather than
individual tracks. WMP11 doesn't cater for this, but it occurred to me
that if I could encode the albums as single tracks when ripping (as well
as individual tracks) then I could fabricate a playlist that played the
"Single Album" audio files.

I don't think WMP can be persuaded to rip albums to a single audio file,
and I couldn't find such as option in either Exact Audio Copy or CDEX.

Has anyone achieved this?

Press F9 in CDEx to extract all tracks to a single file.

Not in my CDEX 1.70 beta 2 - pressing F9 is the same as "Extract CD
tracks(s) to compressed audio file(s)".

At least, that's what the progress popup implies:

Extracting track 1 ... to file 01-A Map Of the World
Extracting track 2 ... to file 02-Family

and so on. The files are being created individually.

So I looked a little further. There is another icon which extracts "A
portion of the CD" and it defaults to the entire CD.
