I've set all of the Outlook Contacts settings I can find to process names in
the last, first order, but still find new contact folders sort and show names
in a first,last order. Can you tell me where all these settings are so I can
figure out which one I have missed?

You first. The following are the pre-requisites for an answer:
1. Outlook version
2. View to which you are referring (there are many)
3. What you mean by "process names"

1. Outlook 2007
2. Address card & Detailed address card view
3. "process names" = displaying names in above views or inputing names in
the Full Name field of a contact entry.

Doesn't help at all. You're asking several completely unrelated questions.
Clarify your post. Use Outlook terms, not your own. What is it you want to
do?
Control the format of the Full Name field of your Contacts? If so, new or
existing records?
Control the Sort Order of the 2 views in question? If so, you would
customize the Sort order for each view in question.

I have 2 questions:
1. I want my to my business card and address card contact folder views to be
sorted last name then first name and not the other way around.

2. When I complete the contact card name field, I want the first word I
enter to be interpreted as the firstname and the last word as lastname.

Not much. I can, at least, provide some close guesses.
1. You would set the sort order for said views to use a field that is in
Last, First Format. Only you could know what fields those are since only you
configured the format for your fields.
2. There is no such thing as "the contact name field." If you are referring
to the "Full Name..." field, then you would set your preferences for that
field in Tools > Options > Preferences > Contact Options... > Default Full
Name Options... These settings will only apply to new Contacts and will not
change your existing Contacts. Changing the setting for existing Contacts
would require creating and running code.
