Outlook will always show all 24 hours. You can't hide non-working hours
(although Outlook does color them differently than your working hours).

you can't hide them or only show working hours but outlook should open with
the starting hour of your work day at the top. If you use a large screen or
smaller scale and more than just the work hours will display, they will.
