I have set up three sites for our three DCs. I have moved each of the DCs to
the correct site, Default-First-Site-Name to Site A, Site B, Site C for DC A,
DC B, and DC C. Now can I delete the Default-First-Site-Name without any
issues?

Shouldn't be a problem.

You could have just renamed the Default-First-Site if you wanted.
