It seems that DSADD and DSMOD only change SOME of the standard
attributes... not sure why they would limit these tools as such, or am
I mistaken?

If not, what is the easiest way to change a custom attribute from a
batch file? In our case, "employeeNumber".

CSVDE or LDIFDE. CSVDE is for exporting or importing new objects. LDIFDE is
for exporting, importing new objects as well as altering current objects.
Both are scriptable.
